Pancakes are the heart and soul of our big day here in Liberal, Kansas. They’re a classic comfort food that brings friends and families together, and they’re easier to make than you might think. Whether you’re celebrating Pancake Day with us or just craving a warm, fluffy stack, here’s our favorite go-to recipe.
Ingredients
- 1½ cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1¼ cups milk (plus more if needed for consistency)
- 1 egg, lightly beaten
- 2 tablespoons melted butter (plus extra for the pan)
Instructions
- Mix the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Combine the wet ingredients: In a separate bowl or measuring cup, whisk the milk, egg, and melted butter until well blended.
- Bring it all together: Make a well in the center of your dry ingredients. Pour in the wet mixture, stirring gently until just combined. A few small lumps are fine—it helps keep the pancakes tender.
- Heat the pan: Warm a non-stick skillet or griddle over medium heat. Lightly coat the surface with butter.
- Cook and flip: Scoop ¼ cup of batter for each pancake. Cook for about 2–3 minutes, or until bubbles form on the top. Flip, then cook for another 1–2 minutes until golden brown.
Serve your pancakes hot with butter, syrup, fresh fruit, or your favorite toppings. Whether you’re gearing up for our famous Pancake Day celebrations or simply looking for a hearty breakfast, this recipe will bring the flavor and fun of Pancake Day right to your table!
